Oversee all beverage operations in the F&B Outlet department, involving a strategic blend of creativity and business acumen to develop innovative beverage programs that not only captivate guests but also enhance the establishment’s reputation and profitability.
Demonstrate a deep understanding of market trends and consumer preferences to define the drinking experience and set the establishment apart in a competitive landscape.
Develop and monitor the beverage budget, oversee inventory levels and beverage costs, and produce guidelines for bar preparation and the presentation of beverage products.
Duties may include but not limited to:
Provide strategic and hands-on leadership for all Beverage operations, including talent acquisition, training, workforce scheduling, performance management, and corrective actions, while consistently auditing and monitoring service quality to uphold brand standards and operational excellence.
Develop and implement beverage menus, ensuring a diverse selection that meets the establishment’s standards and customer preferences.
Coordinate with the marketing team to promote beverage offerings through events, tastings, and special promotions to attract and retain customers.
Stay abreast of current beverage trends and practices within the area of responsibility and communicate pertinent information to management, peers, direct reports, and team members as appropriate.
Maintain positive client and guest relations; respond to client requests and ensure alignment with company standards; investigate and follow through on client and guest complaints.
Analyze sales data and customer feedback to identify trends, adjust offerings, and improve the beverage program’s profitability and popularity.
Monitor beverage par levels and implement ordering strategies to maintain optimal stock while minimizing waste and overstock.
Conduct monthly reviews of beverage costs across all F&B outlets and provide action plans or recommendations to keep beverage costs in line with the budget.
Oversee the maintenance and repair of beverage equipment to ensure operational efficiency and minimize downtime.
Develop the budget and monitor the profitability of Beverage operations; recommend and establish pricing and portioning for products and services in line with approved profit and planning guidelines.
Produce and keep updated the master wine list, master beverage list, master beverage recipes, and beverage operating standards.
Conduct regular spot checks across all front and back bar areas to ensure strict adherence to operational standards and consistency in service quality.
Produce bi-weekly reports identifying areas for improvement across all bars.
Communicate directly with outlet managers and line team members on daily beverage-related needs, requirements, and expectations.
Regularly conduct wine knowledge training from basic to intermediate levels for outlet managers and line staff; select and develop an internal wine sommelier team to support wine sales across dining outlets.
Ensure the effective transfer of in-depth knowledge of wines, spirits, and mixology to the team, enabling informed recommendations and beverage pairings that enhance the overall guest dining experience.
Enforce compliance with alcoholic beverage regulations, Responsible Service of Alcohol requirements, and safety and sanitation protocols in accordance with health regulations and standards.
Ensure all bars comply with applicable company policies and procedures as well as Vietnam local laws.
Maintain a clean, safe, and hazard-free working environment across all areas of responsibility.
Enhance team members’ expertise in beverages and wines through structured education programs, continuous training, personalized coaching, and constructive performance counseling to foster professional growth and service excellence.
Comply with all Company regulations and policies from time to time, including but not limited to Internal Labor Regulations, the Code of Conduct, and internal policies.
Perform all other duties as assigned by the Head of Division from time to time, within the scope of the job position.

Minimum 6 years of experience in F&B or bar operations within a sizable international hotel or casino, or an equivalent combination of education and experience; casino gaming and/or hospitality background is preferred.
Academic background or coursework in beverage management, wine and spirits education, and/or mixology.
Ability to communicate effectively with guests in English, Chinese, and Vietnamese.
Proficiency in using Microsoft Windows and Microsoft Office applications.
Demonstrated experience in crafting beverage menus and wine lists, with a strong understanding of market trends.
Willingness and ability to work flexible schedules, including nights, weekends, and holidays.

High school diploma required; college or university degree in a related field from an accredited institution is preferred, and/or equivalent relevant work experience.
